How much of NYC restaurants are just Sysco?

So Sysco seems to be EVERYONES food supplier and I’m wondering if there are any must try places that have other suppliers?

I am not looking for a Sysco free restaurant, but a place that sources enough “other” ingredients that you can tell.

Not sure if that makes sense.
