Real Peking Duck?

I’m looking for real Peking duck with puffed skin thick with air holes. The skin should be blown with air prior to roasting to separate it from the meat, which makes it soggy and prevents it from puffing with the heat.

Almost every restaurant uses a simple roasted duck with thin skin that could never hold up to traditional carving. I‘m not interested in a place where the skin is already shriveled up before it’s carved.

Does anyone know where I can find a crispy skinned Peking duck like the photos?
